Beef Popper Taco

1 Lb seasoned beef skirt steak for fajitas
2 Lb bacon-wrapped cream cheese jalapeno poppers
8 flour tortillas
3 Tbsp fresh guacamole
1 cup(s) queso Oaxaca, shredded

Instructions

Bring a cast iron skillet to medium heat. Add skirt steak and brown on all sides for 2 to 3 minutes.

Preheat oven to 380ºF. Place cast iron pan with beef in oven and cook 25 minutes.

Meanwhile, bake poppers at the same temperature for 15 minutes. Remove from pan, let cool then chop into small pieces. Set aside.

Heat tortillas in a non-stick pan and place in a tortilla holder to keep warm.

When beef is done, remove to a cutting board and rest 2 to 3 minutes before slicing.

To build tacos, place a small amount of guacamole down the center of each tortilla followed by beef, popper crumbles, and shredded cheese.
