1/2 cup(s) Hill Country Fare Plain Bread Crumbs
1/4 Tsp Hill Country Fare Garlic Powder
1/4 Tsp Hill Country Fare Onion Powder
1/4 Tsp McCormick Paprika
1/2 Tsp H-E-B Pure Ground Black Pepper
1/2 Tsp salt
1 Tbsp H-E-B Select Ingredients Extra Virgin Olive Oil
1 Hill Country Fare Grade A Large Eggs, beaten
1 Lb pork tenderloin, trimmed
4 Tbsp Hill Country Fare Corn Starch

Instructions

Preheat oven 400ºF.

Lightly spray a foil lined sheet pan with nonstick cooking spray. Set aside.

In a shallow dish combine bread crumbs, garlic powder, onion powder, paprika, black pepper, salt and olive oil.

In a separate bowl, whisk together egg and 3 tablespoons water.

Sprinkle cornstarch on both sides then gently pat.

Dip each pork medallion in egg mixture then dredge in bread crumbs until both sides are thoroughly coated.

Place breaded medallions on prepared sheet pan and bake 15 to 17 minutes or until golden brown and internal temperature reaches 145ºF.

Serve with braised or roasted cabbage.
