3 Tbsp H-E-B Organics Liquid Coconut Oil
2 cup(s) Atry Smoked Basmati Rice
1 Tbsp turmeric, ground
4 cup(s) vegetable broth
1 cup(s) frozen peas
1/2 cup(s) cilantro, chopped
1/4 cup(s) cashews, chopped

Instructions

Heat oil in a medium sized sauce pan over medium-high temperature.

Add in rice and cook until it is fragrant, then stir in turmeric.

Pour in the broth and bring to a boil, reduce to a simmer, add peas and cover. Cook for 15 minutes and remove from heat, then let stand with lid on.

Remove lid, add in cilantro and cashews, fluff with a fork and serve.
