Avocado Vinaigrette

Ingredients
- 1/2 cup Fresh cilantro, leaves tightly packed
- 1/2 cup Fresh mint, leaves tightly packed
- 3 Garlic cloves, crushed
- 1/3 cup Green onions, chopped small
- 1 Large avocado, flesh scooped out, pit and skin discarded
- 1/4 cup Limes, juice
- 1/4 cup Red wine vinegar
- 1 cup Water, plus more as needed for consitency
Instructions
- In a blender add all ingredients, blend until smooth and everything is incorporated.
- If dressing is too thick, simply add a 1/4 cup more water at a time until desired consistency is reached.
- Dressing should be creamy and not watery. Season to taste with salt and pepper as needed.
- Chef's Note: This vinaigrette also works great as a dip for veggies too.
