Avocado Vinaigrette

Unsaved Avocado Vinaigrette

Ingredients

  • 1/2 cup Fresh cilantro, leaves tightly packed
  • 1/2 cup Fresh mint, leaves tightly packed
  • 3 Garlic cloves, crushed
  • 1/3 cup Green onions, chopped small
  • 1 Large avocado, flesh scooped out, pit and skin discarded
  • 1/4 cup Limes, juice
  • 1/4 cup Red wine vinegar
  • 1 cup Water, plus more as needed for consitency

Instructions

  1. In a blender add all ingredients, blend until smooth and everything is incorporated.
  2. If dressing is too thick, simply add a 1/4 cup more water at a time until desired consistency is reached.
  3. Dressing should be creamy and not watery. Season to taste with salt and pepper as needed.
  4. Chef's Note: This vinaigrette also works great as a dip for veggies too.
