Tailgater Nachos

Unsaved Tailgater Nachos

Ingredients

  • 2 tbsp Olive oil
  • 1 lb Lean grass fed ground beef
  • 1 tsp Green ancho chili seasoning, plus more as needed to taste
  • 7.5 oz Siete Corn Tortilla Chips Maiz Totopos - Lime, or any tortilla chips
  • 1 cup Black beans with jalapeño & lime, drained of any juice
  • 1 cup Pico de gallo, plus more as needed
  • 1 cup H‑E‑B Mi Tienda Molcajete-Style Salsa Roja – Mild/Medium, plus more as needed
  • 1/3 cup Green onions, or as needed
  • 3 cups Shredded colby cheese, or as needed

Instructions

  1. Preheat oven to 350ºF.
  2. Set a sauté pan over medium heat, add oil and allow to get hot before adding ground beef and chili seasoning. Stir-fry until fully cooked. Set aside to cool slightly.
  3. To assemble nachos, evenly spread tortilla chips on prepared sheet pan.
  4. Spread cooked ground beef, beans, pico de gallo, salsa and green onions over the chips.
  5. Cover everything with a layer of cheese then bake for 10 to 15 minutes or until cheese is fully melted and chips are just toasted.
  6. Allow to rest for a few minutes then top with guacamole and sour cream if desired.
