Ingredients
- 5 Bolner's Fiesta Chili Cascavel (Guajillo), approximately 1.5 oz.
- 5 Dried chile chipotle, approximately 1/2 oz.
- 2 tsp Cumin seed
- 1 tsp Whole caraway seeds
- 6 Peeled garlic cloves
- 1/2 tbsp Paprika
- 1/4 cup Fresh lemon juice
- 1/3 cup Sunflower Oil
Instructions
- In a small bowl, add dried chilies and completely cover with boiling water. Cover with plastic wrap and set aside for 45 minutes to soften.
- While peppers are steeping, add cumin and caraway seeds to a small pan and toast over low heat until fragrant and just slightly darkened in color.
- Using a spice grinder, blender, or mortar and pestle, grind toasted seeds into a powder and set aside.
- Once peppers are soft, drain liquid reserving 1/4 cup of soaking liquid. Add peppers, reserved soaking water, garlic, powdered cumin and caraway, paprika, lemon juice, and oil to a blender and blend until smooth.
- Season to taste with salt and pepper and place in an airtight container. Refrigerate for up to a week.
- Chef's Note: Use Pilpelchuma on everything from eggs, veggies or any proteins.
