Low Carb Cauli-Bit Stuffing

Ingredients

  • 14 oz Caulibits or fresh head of cauliflower, chopped
  • 7 oz Chopped celery
  • 2 tbsp Extra virgin olive oil
  • 1 oz Fresh Italian parsley, chopped
  • 1 oz Fresh garlic clove, minced
  • 1 tsp Fresh sage, fresh, chopped
  • 1/2 tsp Ground black pepper
  • 1/2 tsp Kosher salt
  • 3 oz Leeks, whites only, chopped
  • 5 oz Mushrooms, chopped
  • 5 oz White onion, sliced

Instructions

  1. Preheat oven to 450ºF.
  2. Combine all ingredients together in a large bowl then transfer to a large baking dish.
  3. Place in oven and roast 20 minutes, then stir and return to oven for remaining 25 minutes.
  4. Remove and transfer to serving dish and serve alongside turkey.
