Chocolate Lava Cakes

Unsaved Chocolate Lava Cakes

Ingredients

  • 4 oz Salted butter
  • 6 oz 55% Cacao Semi‑Sweet Chocolate Baking Chips
  • 2 Large eggs, whole
  • 3 Large eggs, yolks only
  • 1 1/4 cups Powdered Sugar
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt
  • 1/3 cup All Purpose Flour

Instructions

  1. Preheat oven to 450ºF. Prepare 4 oven-safe ramekins with a generous amount of non-stick baking spray.
  2. Melt butter in a microwave-safe bowl then stir in chocolate chips. Set aside to melt.
  3. Meanwhile, in a large bowl, whisk together eggs and egg yolks, powdered sugar, vanilla, and salt. Beat or whisk until mixture is a light pale yellow.
  4. Add chocolate mixture along with the flour and beat until incorporated. Scrape down sides of bowl and mix for 15 additional seconds. If chocolate isn't completely melted, return to microwave and heat at 10-second intervals until smooth.
  5. Transfer batter to prepared ramekins then place on a baking sheet. Bake for 12 minutes or until cakes have puffed and sides and tops are set but still slightly jiggly. Let cakes stand for 1 minute.
  6. To serve, carefully set a small dessert plate upside down on top of a ramekin. Using a potholder, invert ramekin onto plate. Let stand a few seconds, then remove ramekin. Repeat with remaining ramekins. Serve with berries.
