  • 2 tbsp Rice wine vinegar
  • 1/4 cup Fresh basil, chopped

  • 2 Large avocado, chopped
  • 1/8 tsp Kosher salt
  • 2 tbsp Extra virgin olive oil

Instructions

  1. Cook the corn according to package directions, drain and allow corn to cool.
  2. Combine corn, tomato, avocado, basil, onion, olive oil and red wine vinegar in a salad bowl.
  3. Season the salad with salt and pepper.
  4. Gently toss the salad to coat the ingredients.
  5. Cover with plastic wrap and chill for 30 minutes.
