Avocado Corn Salad

Ingredients
- 12 Cherry tomatoes, cut into quarters
- 1/2 cup Red onions, diced
- 2 tbsp Rice wine vinegar
- 1/4 cup Fresh basil, chopped
- 2 cups Frozen sweet white corn, frozen
- 2 Large avocado, chopped
- 1/8 tsp Kosher salt
- 2 tbsp Extra virgin olive oil
- 1/8 tsp Ground black pepper
Instructions
- Cook the corn according to package directions, drain and allow corn to cool.
- Combine corn, tomato, avocado, basil, onion, olive oil and red wine vinegar in a salad bowl.
- Season the salad with salt and pepper.
- Gently toss the salad to coat the ingredients.
- Cover with plastic wrap and chill for 30 minutes.
