Roasted Mushroom and Zucchini Bolognese (Vegan)

Ingredients

  • 1 Large portabella mushroom cap
  • 3 tbsp Extra virgin olive oil
  • 2 tsp Fresh garlic clove, finely minced
  • 1/2 tsp Red pepper flakes
  • 24.3 oz Orti di Calabria Vegan Bolognese Sauce
  • 10.7 oz Zucchini spirals
  • 10 Medium fresh basil

Instructions

  1. Rinse mushroom caps briefly under water and dry well with a paper towel. Chop into 1 inch cubes.
  2. Preheat a large, dry skillet over medium-high heat. When hot, add oil and mushrooms, stir to coat and let mushrooms sear while stirring as little as possible. Cook 4 to 5 minutes, or until nicely browned.
  3. Reduce heat to medium. Add garlic and red pepper flakes, stir and cook another 2 to 3 minutes, or just to soften garlic.
  4. Stir in Bolognese sauce and bring to a gentle simmer. Cook for 2 to 3 minutes.
  5. Add zucchini noodles and basil and toss to coat. Warm through for 2 minutes and remove from heat. Serve immediately.
