Beef Tenderloin with Chocolate Demi

Ingredients
- 16 oz Beef tenderloin, cut into 4 fillets
- 1 tsp 100% Unsweetened Cocoa Powder
- 1 tbsp Extra Virgin Olive Oil
- 1 Fresh Rosemary
- 1 tbsp Classic French Demi-Glace
- 1 cup Port Wine, or red wine of your choice
- 1 oz 55% Cacao Semi‑Sweet Chocolate Baking Bar, broken into squares
- 2 tbsp Salted Butter
Instructions
- Place a large cast-iron skillet over medium-high heat.
- While skillet is heating, season fillets generously with cocoa powder, salt and pepper then drizzle lightly with oil.
- Sear fillets for 4 to 6 minutes per side or until desired doneness is achieved. Remove steaks from pan, cover with foil to keep warm, and set aside.
- Reduce heat to medium, then add in rosemary, demi-glace, and port wine. Bring to a simmer stirring until all of the demi is melted. Let reduce for 3 to 4 minutes.
- Remove from heat, add chocolate squares and stir until melted. Whisk in cold butter until completely incorporated. Discard rosemary.
- Serve over sliced fillet.
