Unsaved Truffle Steak and Vegetable Mac and Cheese

Ingredients

  • 1 tbsp Grapeseed oil
  • 8 oz Sliced mushrooms
  • 1 lb Asparagus, cut into thirds, woody stems removed
  • 1 1/2 tsp Sabatino Tartufi Truffle Salt, divided use
  • 9.2 oz Sabatino Pronto Truffle Mac and Cheese
  • 2 oz Sabatino Tartufi Truffle Crisps
  • 2 tbsp Butter, melted
  • 3 tbsp Shredded Parmesan
  • 1/3 cup Shredded mozzarella
  • 2 Ribeye sweetheart steaks

Instructions

  1. Preheat oven to 400ºF or grill on high heat. Spray an 8x8 baking dish with non-stick spray and set aside.
  2. In a medium pan set over medium-high heat, add oil and heat for 1 minute. Add mushrooms and asparagus, and sauté for 3 to 5 minutes or until vegetables have softened. Season with 1/2 tsp. of truffle salt.
  3. Cook Mac and cheese according to package directions. Spray an 8x8 baking dish with non stick spray.
  4. While mac is cooking, add crackers into a bowl of a food processor. Pulse until a fine crumb is formed. Add the melted butter and parmesan and pulse to combine.
  5. Mix the sauteed vegetables, mac and cheese, and shredded mozzarella. Place into the prepared pan. Top with truffle cracker topping. Place in the oven.
  6. Season steak with remaining truffle salt. Bake in oven-safe tray until cooked to desired doneness, about 17 minutes for medium rare, or if grilling, remove butter pucks and place steak on preheated grill for 7 minutes for medium rare, flipping halfway.
  7. Slice steak, place butter pucks on top, if removed, and serve with mac and cheese.
