Open Faced Avocado Concha Brunch Burger

2 H-E-B Variety Conchas
2 large avocados
1 Tsp ground cumin, as needed to taste
2 mandarins, skin peeled and oranges roughly chopped
2 Tbsp extra virgin olive oil, as needed for drizzling
2 Tbsp flax seeds, toasted and used as needed

Instructions

Cut each concha in half then toast in toaster or toaster oven. Remove and set on a serving tray.

Scoop out 1/2 an avocado between both halves of a concha, gently mashing with a fork to spread. Repeat with remaining concha.

Season with a pinch of salt, pepper and cumin. Add mandarin pieces evenly on top of each half.

Drizzle with olive oil and, if desired, sprinkle toasted flax seeds over the top. Serve open-faced.
