4 1/4 cup(s) H-E-B Select Ingredients Reduced Fat 2% Milk, divided
2/3 cup(s) sugar
1/4 Tsp salt
2/3 cup(s) medium grain rice, raw
1 egg, large
1/4 Tsp ground cinnamon
1/4 cup(s) raisins
1 Tsp pure vanilla extract
1 Tbsp rum

Instructions

Combine 4 cups milk, sugar, salt and rice in a medium, heavy-bottomed saucepan.

Stir and bring to a boil over high heat.

Lower heat and simmer gently 1 hour, stirring often.

Meanwhile, beat egg in a medium bowl.

Stir in 1/4 cup cool milk, cinnamon, raisins, vanilla and rum.

When rice is tender, slowly add the hot mixture to the bowl and stir for 1 to 2 minutes.

Sprinkle with cinnamon and serve.
