Honey Chipotle Deep Fried Turkey

Ingredients

Recipe makes 18 Servings

12 Lb H-E-B Natural Texas Raised Turkey, thawed
5 large peanut oil
2 large white onion, chopped
3 H-E-B Peeled Garlic Cloves
12 Oz beer
2 Tbsp honey
2 Tbsp chipotle chili powder
1 bunch of cilantro
2 Tbsp lime, juiced

Instructions

Remove turkey from wrapping, then remove neck and giblets and discard.

Puree onions, garlic, beer, honey, chipotle chili powder, cilantro and lime juice. Then strain marinade and pour into injector.

Gently inject marinade into meat. Press gently on the plunger as not to tear the meat.

Place turkey in refrigerator overnight.

To determine how much oil is needed, place turkey in fryer and fill with water until it is completely covered.

Remove turkey from fryer and mark water line on the outside of fryer. This will be the fill line for your oil. There should be 3 to 5 inches from the line to the top of fryer to ensure that oil doesn't boil over.

Fill fryer with oil, using the fill line as a guide. Heat oil to 375°F.

Once oil has reached the desired temperature, pat turkey dry and place in basket.

Turn off burner, remove lid and slowly lower turkey into fryer. Replace lid and turn burner back on.

Cook turkey for 4 minutes per pound or until internal temperature reaches 165 to 175°F.

Turn off burner and slowly remove turkey.

Allow all oil to drain off and let turkey rest for 20 to 30 minutes prior to carving.
