Homemade Texas Pecan Toffee

14 Oz Durham's Texas Mammoth Pecan Halves
16 Oz unsalted butter
1 Tsp kosher salt
2 cup(s) H-E-B Organic Pure Cane Sugar
1/3 cup(s) corn syrup
1 Tsp vanilla extract

Instructions

Line a sheet pan with parchment paper then scatter pecans relatively close together on pan. Set aside.

In a medium sized stainless steel pot, add butter and allow to melt before adding salt, sugar, corn syrup and vanilla.

Bring to a simmer over medium heat, stirring constantly, and continue to cook until color reaches a medium brownish/praline color.

Once toffee has reached desired color, use a spatula to pour out sugar mixture evenly over pecans on prepared pan.

Work relatively quickly to smooth out sugar and pecan mixture. Let sit at room temperature until crunchy and fully set. Break apart and enjoy.

Chef's Note: During cooking of sugar, make sure to keep hands away from bubbling mixture. Best way to keep toffee from burning is to whisk intermittently to keep sugar mixture moving.
