Homemade English Toffee with Pecans

Ingredients

Recipe makes 32 Servings

2 cup(s) granulated sugar
1 Tbsp light corn syrup
1/2 cup(s) water
1 Lb unsalted butter, cut into pieces
1 Tsp kosher or sea salt
1 Tbsp vanilla extract
16 Oz H-E-B Baker's Scoop Chocolate Coating
6 Oz Hill Country Fare Pecan Cookie Pieces, as needed for garnishing

Instructions

Spray liberally a 9 x 13-inch baking dish with non-stick spray.

In a medium sized non reactive pot, add sugar, corn syrup, water, butter and salt.

Bring to a very low boil and allow to cook for 15 to 20 minutes. Stir mix intermittently as it starts to change color.

Cook for 5 to 10 more minutes stirring with a spatula from time to time until mixture reaches a caramel color.

Turn off heat and add vanilla extract. Use caution and back up from pot as it will spit and sputter.

Whisk to combine well, then pour toffee onto sprayed pan.

Allow toffee to set for at least 60 minutes to make sure it fully hardens. When toffee is hardened, melt chocolate in microwave and evenly pour over toffee.

Smooth with a spatula to evenly distribute. Immediately sprinkle with chopped nuts over top.

Allow to completely cool and chocolate to harden before breaking apart and serving.
