Ingredients

Recipe makes 10 Servings

4 Tbsp unsalted butter
4 Tbsp H-E-B Baker's Scoop All Purpose Flour
1 cup(s) Whole Milk
2 Tbsp white onion, minced
16 Oz H-E-B Chopped Spinach
4 Oz H-E-B Cream Cheese
1/4 cup(s) H-E-B Parmesan Cheese, grated
1 Tsp kosher salt

Instructions

Melt 3 tablespoons butter in a small skillet over medium heat.

Add flour, stirring, until blended; simmer 2 or 3 minutes.

Stir milk in gradually and cook until thickened and smooth; use a wire whisk to blend completely.

Remove pan from heat.

Place remaining tablespoon of butter in a 2-quart saucepan.

Melt over medium heat, add onions and cook 3 or 4 minutes or until tender.

Stir in spinach; add 2 tablespoons water, cover pot and reduce heat to medium-low.

Stir occasionally and cook until spinach is tender.

Stir in cream cheese, Parmesan cheese and salt.

Stir well to blend and simmer a few more minutes; serve while hot.
