Grilled Mediterranean Stuffed Apricots

6 Oz H-E-B Dried Mediterranean Apricots
1/2 cup(s) Hill Country Fare Almond Slivers
1/2 cup(s) H-E-B Brown Sugar
1 cup(s) H-E-B Reduced Fat Crumbled Feta Cheese
2 Tbsp fresh mint leaves

Combine the dried apricots and 2 cups warm water in a bowl, cover with plastic wrap, and allow to sit for 30 minutes. Drain the water and open the apricots like a clam or butterfly. Place the opened apricots on paper towels to drain.

While apricots are soaking, heat a heavy skillet over medium heat for 2 minutes. Add the almond slivers and sugar and stir constantly until sugar melts and coats the almonds (about 3 minutes). Immediately spoon the glazed almonds onto a sheet of foil to cool.

Combine glazed almonds, feta cheese, and mint leaves in a food processor and process to a chunky texture, about 30 seconds. Set cheese mixture aside.

Heat gas or charcoal grill to 375 deg. F . Spray a vegetable or mesh grilling rack with nonstick cooking spray and set aside.

Fill each open apricot with 1 to 2 tablespoons feta cheese mixture and press gently into the apricot base. Place the stuffed apricots on prepared grilling rack. Grill with the lid open for 2 minutes or just until the cheese begins to melt. Quickly remove from the grill and allow to cool for 5 minutes. Place on a platter and serve as appetizers.
