1 1/2 Lb carrots, cut into thick slices
3/4 cup(s) brown sugar
1/4 cup(s) Promise Margarine
15 Oz Sugary Sam Cut Yams
1 cup(s) H-E-B® Sweet Pineapple Chunks
9 Oz H-E-B® Pitted Prunes

Instructions

Boil enough water to cover carrots with brown sugar and margarine, and cook until tender; do not drain.

Transfer to a bowl, then add yams, un-drained pineapple chunks and prunes; taste for sweetness, and add more brown sugar if needed.

Mix well, and pour into a casserole dish; bake about 45 minutes until most liquid has evaporated, but not dry.
