Recipe makes 8 Servings

1 non-stick cooking spray
8 Oz maple bacon, thick sliced, coarsely chopped
2 cup(s) low sodium chicken broth
1 cup(s) H-E-B® More Fruit Apricot Spread
1/2 cup(s) carrots, diced
1/2 cup(s) yellow onion, diced
1/2 cup(s) celery, diced
1/2 cup(s) dried cranberries
4 Tbsp salted butter
4 cup(s) herb seasoned stuffing
1/2 cup(s) walnut, pieces

Instructions

Heat oven to 350°F.

Coat a 9 x 13-inch baking dish with non-stick spray.

Cook bacon in a large skillet over medium-high heat until browned, then drain on paper towels.

Heat broth in a small sauce pan with apricot sauce, diced carrots, diced onion, diced celery, cranberries and butter. Bring to a boil then remove from heat.

Place dry stuffing, walnuts and bacon in a large mixing bowl. Toss with broth mixture then transfer to prepared baking dish.

Bake uncovered 30 minutes.
