Zucchini Noodles with Garlic Tomato Sauce

3 Tbsp H-E-B Olive Oil
1 Pt Angel Sweet tomatoes, cut in half long ways
2 garlic cloves, minced
1 Tsp kosher salt
2 cup(s) baby spinach, chopped and packed into cup for measuring
1 pkg. Veggie Noodle Co. Zucchini Spirals (10.7 OZ)
2 Tbsp Parmesan cheese, grated

Instructions

Heat a large skillet over medium-high heat.

Add oil, tomatoes, garlic and salt to pan. Cook and stir until tomato skins begin to brown, smashing tomatoes gently with back of a spoon as they cook. Simmer about 3 to 4 minutes.

Add spinach and zucchini spirals. Stir gently with tongs to coat spirals with oil and sauce.

Cook 3-4 minutes, or until noodles begin to soften slightly.

Remove pan from heat and divide noodles and pan sauce between 2 plates. Sprinkle with cheese and serve immediately.
