Recipe makes 10 Servings
4 Tbsp olive oil
1 large white onion, thinly sliced
5 cloves garlic, chopped
1 head of cauliflower, cut into florets
3 cup(s) vegetable broth, divided
3/4 cup(s) whole milk
1/2 Tsp kosher salt
1/2 Tsp white pepper
1/2 cup(s) Parmesan cheese

Preheat a large skillet to medium. Add olive oil, onions and garlic. Cook until onions are well caramelized, stirring frequently.

Meanwhile, bring a large pot of water to boil. Add cauliflower and cook until fork tender. Strain in a colander.

Place caramelized onions and cauliflower in a blender or food processor. Add half the broth and blend until smooth.

Add in remaining broth, milk, salt, pepper, and Parmesan cheese.

Pour into a saucepan and gently heat. Serve over cooked pasta.
