Vegan Garlic Mashed Potatoes

Ingredients

Recipe makes 6 Servings

2 Lb russet potatoes, peeled, diced into 1/2 inch cubes
2 large garlic cloves, peeled and root end removed
3 Tbsp Earth Balance Vegan Butter, melted
1 Tsp salt
1/2 Tsp black pepper, ground
1 Tbsp extra virgin olive oil
3/4 cup(s) Oat-ly Oat Milk, original flavor, divided use

Instructions

Place potatoes and garlic cloves in a medium pot and cover with cold water. Bring to a boil and cook until fork tender, about 15 to 18 minutes. Drain and let sit for 2 minutes to remove excess liquid. Transfer to a large bowl.

Using a potato masher or slotted spoon, mash potatoes until no large chunks remain.

Add in melted vegan butter, salt, pepper, olive oil, and half of oat milk. Mix and mash potatoes, adding remaining oat milk as needed, until no lumps remain and mixture is fluffy. Serve immediately.
