Recipe makes 4 Servings

4 ears of corn, husk and silk removed
1/4 cup(s) mayonnaise
1/4 cup(s) crema
1/4 cup(s) grated Cotija cheese, as needed
1 Tsp chili powder, as needed
1 garlic clove, minced

Instructions

Bring a large pot of water to a boil then gently add ears of corn. Reduce heat to low and simmer until corn is very tender, 20 to 25 minutes.

Meanwhile, in a medium bowl mix mayo, crema, Cotjia cheese, chili powder and minced garlic.

Remove corn from water with tongs and spread about 1 tablespoon of mayo mixture all over the kernels.

Generously sprinkle additional Cotija cheese over the corn and dust with more chili powder, as needed. Repeat with remaining corn.
