Crushed Blackberry Tiramisu Trifle

Ingredients
- 15.2 oz Vanilla flavored cake mix
- 1 cup Whole milk, for cake mix instead of water
- 7 Large eggs, divided use, 3 whole eggs for cake, 4 egg yolks for mascarpone filling
- 1/2 cup Vegetable oil, for cake
- 24 oz Mascarpone cheese
- 1 cup Heavy whipping cream
- 3/4 cup Granulated sugar, divided use, 1/2 cup for cream mixture, 1/4 cup for berries
- 1 tbsp Vanilla bean paste
- 1/2 tsp Fine sea salt
- 3 pt Sweet Karoline Blackberries, or regular blackberries if out of season
- 1 tbsp Fresh squeezed lemon juice
Instructions
- Preheat oven to 350ºF.
- Combine cake mix with milk, whole eggs, and oil, in a large bowl and follow instructions on the box. Set baked cake aside to cool completely.
- Spray an oven safe 8x12 inch casserole dish or cake pan with non-stick spray and pour batter into dish and evenly distribute.
- In the bowl of a stand mixer, add mascarpone cheese, heavy cream, 4 egg yolks, 1/2 cup of sugar, vanilla bean paste, and salt. Use the whip attachment on medium speed until fluffy and thick.
- Bake for 25 to 30 minutes or until a toothpick entered into center of cake pulls out clean. Remove and allow to cool completely before continuing with recipe.
- In a separate bowl, combine 2 pints of blackberries with remaining 1/4 cup of sugar, and lemon juice. Mash with a fork to combine and gently crush the blackberries.
- To make the trifle, break cake into crumbs and evenly layer approximately 1/2 to 1 inch of packed cake crumbs in the bottom of a trifle bowl.
- Follow with a layer of crushed blackberries evenly distributed over the cake crumbs. Evenly spread half of cream mixture over blackberries.
- Repeat layering process with cake, blackberries, and cream, ending with cream as the top layer.
- Garnish with remaining pint of blackberries along the rim of the dish. Cover and set aside for at least 30 minutes to set up before serving.
