24 Oz Four J Meatball Sauce
2 pints, cherry tomatoes
2 1/2 cup(s) brown sugar
1 lemon, juiced
1 Tsp Allspice
4 dried New Mexico chiles
1 Tsp kosher salt
1 Tsp black pepper
1 Tsp ground ginger

Instructions

In a large sauce pot over medium heat, add all ingredients and whisk to combine. Bring mixture to a simmer then lower heat and cook about 1.5 hours.

Once tomatoes are soft and starting to dissolve in sauce, use an immersion blender to purée sauce in pot until it has a smooth consistency.

Once mixture is puréed, return pot to heat and cook additional 20 - 30 minutes or until mixture looks sticky and thick like a jam.

Allow jam to cool completely before jarring or storing. Keeps at least 2 weeks in fridge. Use as sauce or condiment on many different dishes.
