Ingredients

Recipe makes 4 Servings

1 Tbsp canola oil
1/4 cup(s) red onions, very thinly sliced
1/4 cup(s) poblano pepper, very thinly sliced to same size as onions
2 Tsp fresh garlic, finely minced
10 Oz H-E-B Asadero Cheese, roughly cut into 1 inch cubes
1 fl oz tequila
1 Tbsp fresh cilantro leaves, finely chopped
1 small lime, sliced into wedges

Instructions

Preheat oven to 450ºF. In a small, oven-proof skillet (cast iron is perfect for this) over medium-high heat, combine oil, onions and poblanos. Sauté until they just start to soften, about 6 to 8 minutes.

Turn heat off, add garlic and stir through poblano mixture. Add cheese cubes and stir to combine.

Place skillet in hot oven for 7 to 9 minutes, or until cheese is fully melted and starting to brown a little on top.

Remove from oven and gently pour tequila on top. Swirl to warm tequila then use a long match or a long tipped BBQ-style lighter to light tequila to flambé the cheese.

When flames burn out, sprinkle with cilantro and squeeze fresh lime juice on top. Serve with warmed fresh flour tortillas or tortilla chips, as desired.
