Swordfish with Capers and Lemon

12 garlic cloves
2 Tbsp extra virgin olive oil
2 Lb swordfish
2 Oz capers in vinegar
1 Tsp salt
1 Tbsp parsley, chopped
1 Tsp oregano
1 lemon, juiced

Instructions

In a large sauté pan slightly brown garlic in olive oil. Remove and discard garlic once it starts to brown. (This will infuse the olive oil with garlic flavor).

In the same pan over medium heat, add fish and capers to the garlic seasoned oil. Season with salt, parsley and oregano. Cook about 5 - 7 minutes per side, until internal temperature is 145ºF. (Cook time will vary depending on thickness of fish.)

Drizzle lemon juice over fish and set aside for 5 minutes to allow the fish to rest before serving.
