17 1/2 Oz Betty Crocker Sugar Cookie Cookie Mix
3 Tbsp all purpose flour
1 large egg
4 Oz unsalted butter, melted
12 Oz whipped cream cheese
1/4 cup(s) sour cream
2 Tsp Nielsen-Massey Pure Vanilla Bean Paste, or vanilla extract
1 cup(s) powdered sugar
5 kiwi fruit, ends trimmed, skin removed and fruit thinly sliced into rounds
1 1/2 cup(s) organic red grapes, sliced in half
1 mango, sliced

Preheat oven to 350ºF.

Pour contents of cookie mix into a bowl along with flour, egg and butter. Mix well until a dough forms.

Cut a piece of parchment paper to fit a 14 to 16 inch or standard size pizza pan.

Press dough out evenly to fit pan, making sure cookie dough has room to expand. Leave a gap of approximately 1/2 inch to 1 inch from edge of pan.

Bake until cookie is just set and just starting to show a light tan color, about 20 minutes. Remove from oven and allow to cool completely.

While cookie is cooling, add cream cheese, sour cream, vanilla and powdered sugar to a bowl and whisk until smooth and creamy. Set aside or refrigerate until ready to use.

To assemble pizza, spread a layer of cream cheese mixture evenly over cookie. Next add slices of kiwi around outer edge in a circle.

Place grapes cut-side down in a circle next to kiwi then add a second row of grapes.

Finally place remaining kiwi slices and mango in center circle, filling in any gaps where needed with extra fruit.

Refrigerate 1 hour before serving to allow cookie to soften a bit and cream cheese mixture to set.
