Steak with Blue Cheese-Walnut Butter

Ingredients

Recipe makes 4 Servings

6 garlic cloves, crushed
3 Tbsp fresh rosemary, chopped
2 Tbsp olive oil
2 Tsp sea salt, freshly ground
2 Tsp black pepper, freshly ground
4 Beef New York Strip Steaks (about 1.5 Lb), cut .75 or 1-inch thick
2 Oz H-E-B Blue Cheese Crumbles
2 Tbsp unsalted butter, softened
1/4 cup(s) walnuts, toasted and finely chopped

Instructions

Crush garlic into a small bowl. Add rosemary, oil, salt and pepper. Rub mixture over both sides of steaks. Set aside 15 minutes.

Meanwhile, prepare charcoal fire or heat gas grill.

Combine topping ingredients, blue cheese, butter and walnuts. Refrigerate until ready to use.

Grill steaks over Medium heat (375°F) 7-9 minutes per side or until internal temperature in center of steaks reaches 140°F for Medium-Rare or 150°F for Medium doneness.

Spread butter mixture over hot steaks and serve.
