Instructions

1
Preheat oven to 450ºF.
2
Drizzle oil on a foil lined baking sheet, add frozen Cowboy Steak Fries in one layer and bake 9 to 10 minutes, until lightly browned underneath.
3
Remove from oven, turn fries over and bake an additional 3 to 4 minutes, until lightly browned underneath.
4
Meanwhile, place a medium non-stick pan over medium heat and melt butter. Add garlic and onions and cook until just starting to change color.
5
Add flour and whisk until it has a nutty smell and begins to darken slightly, about 5 minutes. Pour in stock, reduce heat to low and whisk constantly until thickened, about 10 to 12 minutes. Season to taste with salt and pepper and keep warm over low heat.
6
Place fries in a serving dish, arrange cheese curds around fries and pour gravy over both while still hot. Toss to combine.
7
Garnish with chives and serve immediately.
8
Chef's Note: I like to also add chopped crispy bacon to make it a bit heartier.
