1 Lb H-E-B Extra Lean Ground Beef
7 Oz H-E-B Diced Sweet Onions
12 Oz H-E-B Mixed Vegetables
29 Oz H-E-B Fire Roasted Diced Tomatoes
1 1/4 Oz H-E-B Texas Chili Seasoning Mix
1 1/2 cup(s) water
7 3/4 Oz Hill Country Fare Complete Instant Mashed Potatoes
1/4 cup(s) H-E-B Fancy Shredded Parmesan
1 Hill Country Fare Extra Large Grade A Eggs

Instructions

Heat oven to 375°F.

Spray a 2-quart baking dish with nonstick spray and set aside.

Spray large heavy bottom skillet with nonstick spray and place over medium heat.

Add ground beef and onions.

Stir-fry until meat and onions for 4 minutes and drain excess fat.

Remove 24 peas from mixed vegetables for garnish.

Add remaining mixed vegetables, diced tomatoes, chili mix and 1/2 cup water to cooked ground beef.

Bring to a boil and cover skillet.

Reduce heat to low and cook chili 10 minutes, stirring often.

While chili is cooking, prepare instant mashed potatoes according to package directions.

Allow potatoes to cool for 5 minutes then stir in Parmesan cheese and egg.

Place mashed potatoes in a large zipper bag, clip one corner 1/2-inch.

Spoon chili in prepared baking dish.

Squeeze potatoes into pointed mounds resembling ghosts.

Place 2 peas in each for their eyes.

Bake on center oven rack for 25 minutes.
