Ingredients

Recipe makes 4 Servings

1 Lb natural ground pork
1/2 Lb Dos Mamacitas Chorizo
1 cup(s) chamoy
1 shallot, minced
1 garlic clove, minced
1/2 cup(s) apple cider vinegar
1 cup(s) shredded cheddar cheese
3 serranos, grilled & chopped
2 Tbsp salted butter
4 conchas, split in half
1/2 cup(s) brown sugar onion jam

Instructions

Combine pork with chorizo, mix well and form into four 6 oz. patties. Cover and refrigerate.

To make chamoy ketchup, combine shallot, garlic and vinegar in a small saucepan and bring to a simmer over medium heat.

Simmer 3 to 4 minutes, then combine vinegar mixture with chamoy in a blender and blend until smooth.

To cook burgers, preheat a skillet or grill to medium-high heat. Cook patties 8 to 10 minutes per side.

Top with cheese and grilled peppers.

Lightly butter cut sides of conchas and grill slightly until lightly browned.

Spread a generous amount of ketchup on each bottom bun and add a cooked patty.

Top with Brown Sugar Onion Jam and other half of concha. Serve.
