Smoky Roasted Salsa

Ingredients

Recipe makes 24 Servings

12 roma tomato, halved
2 garlic, unpeeled
1 small white onions, quartered
1 jalapeño pepper, halved
1 1/2 Tbsp H-E-B Olive Oil
1 Tsp H-E-B Ground Cumin
1/2 Tsp salt
3 Tbsp lime, juiced
1/4 cup(s) fresh cilantro, chopped

Instructions

Preheat broiler.

In a medium baking dish (try the Cocinaware Dutch Oven), place tomatoes, garlic, onion and jalapeño pepper. Drizzle with olive oil.

Checking often, broil 20-25 minutes, or until outsides of vegetables are charred.

Remove vegetables from heat. Remove jalapeño stem and garlic skins.

In a food processor, coarsely chop charred vegetables.

Transfer to Cocinaware Salsa Crock and mix in cumin, salt, lime juice and cilantro.

Season with salt & pepper.
