Ingredients

Recipe makes 6 Servings

2 bone-in chicken breast
1 can lite coconut milk
2 garlic, chopped
1 white onion, chopped
6 baby red potatoes
1 red bell pepper
1 bunch cilantro
1 green onions, bunch, white part only, roots removed
1 Tbsp lime, juiced
1 Tbsp Madras Curry Powder

Instructions

Prepare all ingredients and toss together in large bowl.

Set slow cooker to high setting.

Arrange vegetables on bottom, then place chicken breasts on top. Pour any remaining liquid over chicken.
