Recipe makes 10 Servings

32 Oz frozen sweet corn
12 Oz fire roasted red peppers, finely chopped
1/2 cup(s) H-E-B That Green Sauce, mild or medium
1 cup(s) mayonnaise
8 Oz shredded Mexican cheese blend
1/4 cup(s) shredded Parmesan cheese
1/4 cup(s) fresh green onions, finely chopped (white and green parts)
1/4 cup(s) fresh cilantro, finely chopped

Instructions

Preheat grill to medium.

Combine corn, roasted red peppers, That Green Sauce, mayonnaise, Mexican and Parmesan cheeses, green onions and cilantro in a bowl. Mix thoroughly.

Pour mixture into a cast iron skillet and place on grill for 10 to 15 minutes or until cheese begins to brown and mixture is bubbly and heated through. Serve with tortilla chips.

Chef's Tip: Great holiday recipe since it can be made ahead and then cooked on the grill or in the oven. For oven: bake at 375ºF for 15 minutes.
