Ingredients

Recipe makes 4 Servings

1 Lb shrimp, peeled & deveined
2 Tbsp salted butter
1/2 cup(s) red onion, very thinly sliced
2 Tsp H-E-B Sunflower Oil with Garlic and Herb Flavor
1/2 Tsp red pepper flakes
1/2 cup(s) roma tomatoes, finely chopped
3/4 cup(s) H-E-B Specialty Series Chipotle Garlic Salsa
1/4 cup(s) green onions, finely chopped
1 large avocado, thinly sliced or cubed

Instructions

Wash shrimp under cool running water then lay out on a plate and gently pat dry with paper towels. Set aside.

Heat a skillet on medium-high. Add butter and onions. Sauté 6 to 7 minutes until onions start to soften and butter begins to brown.

Add sunflower oil, red pepper flakes, chopped tomatoes and shrimp. Stir and cook 1 minute.

Stir in chipotle garlic salsa and simmer 4 minutes.

Turn off heat. Add salt or pepper to taste and finish with green onions and avocado.

Serve over rice with a squeeze of fresh lime if desired.
