Shepherd's Pie with Cauliflower

1 Lb H-E-B 96% Lean Ground Beef
1 small onion, chopped
1 garlic clove, chopped
1 kosher salt
1 Tsp black pepper
1 Tsp dried thyme
1 Tbsp ketchup
1 Tbsp flour
1 Lb frozen mixed vegetables
1 head cauliflower
1 cup(s) H‑E‑B Plain Greek Yogurt
1/2 cup(s) H-E-B Shredded Parmesan Cheese

Preheat oven to 400°F.

Spray a large baking dish with non-stick cooking spray. Set aside.

In a large skillet over medium-high heat, cook beef, onions and garlic until meat is well-browned.

Add salt, pepper, thyme and ketchup, then sprinkle in flour. Stir to combine.

Add 1/2 cup water and frozen mixed vegetables, and cook until vegetables are warm throughout and liquid has thickened. Transfer to prepared pan.

Meanwhile, boil cauliflower until very tender. Strain in a colander then return to pan.

Add yogurt and Parmesan cheese. Using a hand held mixer, whip until smooth.

Spread over meat mixture and bake uncovered 20 minutes until browned.
