Seared Salmon with Mint Oil

Ingredients

Recipe makes 4 Servings

1 cup(s) fresh mint, leaves tightly packed
1 serrano pepper, sliced thin
1 cup(s) Aldonza Extra Virgin Olive Oil
1 Lb salmon fillet, cut into 4 fillets
1 Tsp kosher salt
1 Tsp cracked black pepper, plus more as needed
1 Tsp blood orange zest, as needed for salmon

Instructions

Bring a small pot of water to a boil, add mint and allow to cook for 10 seconds. Place mint immediately into an ice bath to cool. Pat mint completely dry and set aside.

Add serrano pepper and olive oil to a blender and puree until smooth.

Pour herb oil through a fine mesh sieve or cheese cloth. Set into a bowl or squeeze bottle for later use.

Place a non-stick pan over medium-high heat. Season salmon fillets with salt, pepper and orange zest.

Place salmon flesh side down, skin side up and cook for 6 to 8 minutes before flipping and cooking an additional 4 to 5 minutes. Salmon should have a nice crust when flipped.

Remove from pan and allow to rest once salmon has reached your desired doneness.

Drizzle each fillet with 1 tablespoon of herb oil and season to taste as needed.
