Seared Salmon with Broccoli & Lemon

Ingredients

Recipe makes 4 Servings

1 Tbsp canola oil, divided
24 Oz salmon fillet, cut into 4 portions
1/8 Tsp iodized salt
1/8 Tsp pepper
3 red potatoes, sliced 1/4 thick
1/2 broccoli crown, chopped small
1 1/2 cup(s) Central Market Low Sodium Chicken Broth
2 Tsp lemon, juiced

Instructions

Preheat oven to 350°F .

Preheat a large sauté pan to medium-high with 1 tablespoon canola oil.

Season salmon with salt and pepper and place in preheated pan. Sear one side of salmon and set aside 5 minutes.

Add remaining oil and potatoes to same pan and sauté 5 minutes on each side.

Add broccoli and sauté another 3 minutes.

Place salmon (seared side facing up) on cooked broccoli/potato mixture.

Add broth and lemon juice and bake 15 minutes.
