14 3/4 Oz salmon, drained, flaked, with bones removed
1 1/2 cup(s) pico de gallo
2 large eggs, beaten
6 Oz Hill Country Fare Mexican Corn Bread Mix
8 H-E-B Classic Havarti Cheese Slices, sliced thinly

Heat oven to 400°F. Line a baking sheet with foil and spray with non-stick cooking spray; set aside.

Combine salmon, pico de gallo, eggs and Mexican cornbread mix in a large mixing bowl. Stir to combine; shape into 6 patties

Bake in oven on middle rack for 15-18 minutes.

Place a slice of H-E-B Classic Havarti cheese on each salmon patty and allow cheese to melt, and serve hot.
