Recipe makes 8 Servings

1 large Tuscon melon
1/4 Lb prosciutto, sliced paper thin
2 Tbsp Rustico Unfiltered Olive Oil

Instructions

Prepare melon by cutting in half and scraping out all seeds. Then slice into about 24 half moon shapes and cut rind off each piece. Set aside on a plate.

Wrap a thin piece of prosciutto around every piece of melon, as if you were wrapping bacon around a hot dog.

Cut into bite size appetizer pieces or kept whole. Drizzle with olive oil and serve.
