1 cup(s) Hill Country Fare Distilled White Vinegar
1/2 cup(s) water
1 Tbsp McCormick Pickling Spice
1 Tbsp H-E-B Kosher Salt
1 Dragon Fruit

Instructions

Bring vinegar, water, pickling spice, and salt to a boil in a pot.

Cut dragon fruit in half lengthwise. Scoop out speckled fruit (discarding skin) and cut into 1/4 inch thick slices.

Place fruit in a resealable pint glass jar. Pour pickling liquid over fruit so it's completely covered.

Seal jar and refrigerate overnight. Serve cold.
