Mustard-Coated Brisket From Boerne

4 Lb Natural Beef Brisket, trimmed of fat
1 large white onion, sliced
2 celery, coarsely chopped
4 H-E-B Peeled Garlic
8 whole black peppercorn
4 McCormick Whole Allspice
1 bay leaves
1/2 cup(s) water
1/2 Tsp H-E-B Black Pepper
1/2 Tsp kosher salt
1/2 cup(s) H-E-B Brown Sugar
3 Tbsp hot honey mustard

Instructions

Heat oven to 350°F.

Place brisket, onion, celery stalk, garlic, pepper, spice, bay leaf and water in a Dutch oven or stock pot.

Remove brisket to a 9 x 13 x 2-inch roasting pan.

Reserve 1/2 cup of the braising liquid and pour around brisket, then season with pepper and salt.

Stir together brown sugar and mustard to form a thin paste for the glaze. Spread over top of brisket.

Bake brisket on middle rack 20 minutes until browned and glaze bubbles.

Let brisket stand 5-10 minutes before slicing across the grain into 1/4-inch thick slices for serving.
