1 Tbsp H-E-B Cayenne Pepper Seasoning
1 Tbsp McCormick Ground Cinnamon
1 Tbsp H-E-B Ground Cumin
4 Hill Country Fare Bone-In Chicken Breasts, trim excess fat & skin
1/2 Tsp H-E-B Kosher Salt
1 Tsp H-E-B Pure Ground Black Pepper
2 Tbsp olive oil
2 large carrot(s), peeled and cut into 2-inch diagonal slices
2 large zucchini squash, cut into 1-inch chunks
1 lemon(s), zested
1 lemon(s), juiced
2 Tbsp Patty's Herbs Fresh Mint, thin sliced

Heat oven to 400°F.

Line roasting pan with foil and set aside.

Combine the cayenne pepper, cinnamon and ground cumin in small bowl.

Rub chicken breasts with 3/4 of spice rub under and over skin, and arrange on prepared roasting pan. Season with salt and pepper.

Combine remaining rub, olive oil, carrots, zucchini, lemon zest, lemon juice, and mint in bowl and toss to coat.

Arrange vegetables around chicken breasts and roast for 35 minutes or until meat juices run clear.

Place chicken and vegetables in serving platter and serve. *For optimal results sear your chicken breasts in a hot pan for 2min per side before roasting. This will ensure some great added color and flavor in the overall dish.
