Moroccan Lentil Soup

Recipe makes 6 Servings

2 Tbsp H-E-B Extra Virgin Olive Oil
1 yellow onion, diced
2 carrots, diced
1 cup(s) H-E-B Lentils
6 cup(s) Central Market Organics Low Sodium Chicken Broth, divided
1/4 Tsp black pepper
1/4 Tsp cumin
1/4 Tsp ground cinnamon
2 cup(s) instant brown rice
1/8 Tsp salt

Instructions

Heat oil in a stock pot, sauté onion and carrots 3 minutes.

Add lentils, 2 cups broth, pepper, cumin and cinnamon. Bring to a boil then simmer 5 minutes.

Add remaining broth, bring to a boil, and add rice. Return to a boil, reduce heat to low, cover and simmer 15 minutes.

Remove from heat and serve. Salt to taste.
