1 cup(s) H-E-B Pure Cane Sugar
1/2 cup(s) Hill Country Fare White Corn Syrup
1 cup(s) H-E-B Unsalted Peanuts
1 Tsp unsalted butter
1 Tsp H-E-B Pure Vanilla Extract
1 Tsp Hill Country Fare Baking Soda

Instructions

Spray a baking sheet, mixing spoon and spatula with nonstick cooking spray and set aside.

Combine sugar and corn syrup in a large microwave safe bowl and microwave on high power for 4 minutes.

Stir in peanuts with greased spoon and microwave peanut mixture on high power for 3 more minutes.

Add butter and vanilla and stir with greased spoon.

Microwave mixture on high power for 1-1/2 more minutes.

Add baking soda and gently stir until light and foamy.

Pour peanut brittle mixture onto the prepared baking sheet and allow to cool 1-1/2 hours before serving.
