1 Lb Fresh Albacore Tuna Steaks
1 small red onions, diced
1 14.65 oz jar quartered artichoke hearts
1/4 cup(s) H-E-B Balsamic Vinegar of Modena
1 bunch Italian parsley, chopped
1 hot house cucumbers, seeds removed and quartered
1/4 cup(s) extra virgin olive oil
1/2 cup(s) capers

Instructions

Preheat oven to 375°F.

Place tuna on a greased baking sheet and cook to desired doneness; typically medium-rare. Remove and cool.

Meanwhile, combine red onion, artichoke hearts, balsamic, parsley, cucumber, olive oil and capers in a large bowl.

Chop tuna into small pieces and incorporate into salad.

Cover and chill until ready to serve.
