Mango and Pineapple Quesadillas

1 non-stick cooking spray
8 whole wheat tortillas
1 cup(s) shredded Asadero cheese
1 cup(s) pineapple, peeled, cored and sliced into rings
1 mango, peeled and sliced

Instructions

Heat a large non-stick skillet on medium. Lightly spray with non-stick spray.

On half of each tortilla, layer cheese, pineapple and mango. Fold in half and press lightly.

Place quesadillas in hot pan and cook 2 minutes per side or until cheese is melted (may have to cook in batches).
